Ingredients (8 Servings)
- 500g beef ribs, cut into small pieces
- 2.5L of water
- 5 grains of cloves
- 2cm cinnamon
- 1 grain of nutmeg, crushed
- 2cm ginger, bruised
- 2 tbsp vegetable oil
- 2 tbsp Sweet Soy Sauce
- 3 potatoes, diced
- 2 carrots, diced
- 2 scallions, thinly sliced
- 2 stalks of celery leaves, thinly sliced
- 2 tomatoes, cut into eight
Ground spices
- 8 pieces of red onion
- 4 cloves garlic
- 2 tsp Beef Broth
- 1 tsp white pepper powder
Chili ingredients
- 10 red bird's eye chilies, boiled
Instructions:
- Boil 1 liter of water in a saucepan. Simmer the ribs for about 20 minutes over low heat until they boil. Remove, and strain.
- Reboil the ribs with a new 1.5 liters of water. Add cloves, cinnamon and nutmeg. Simmer for 60 minutes over low heat until the ribs are semi-tender. set aside.
- Heat the oil in a skillet over medium heat. Saute ground spices until fragrant. Add the spices to the rib stew. Cook until the ribs are tender.
