Ingredients:

For the meatballs:

  • 500g minced beef (or chicken, pork, or a combination of meats)
  • 100g tapioca flour or cornstarch
  • 2 cloves garlic, minced
  • 1 small shallot, minced
  • 1/2 tsp salt
  • 1/2 tsp ground white pepper
  • 1/2 tsp sugar
  • 1/2 tsp baking powder
  • 1/2 tsp chicken powder (optional)
  • 1 egg
  • Ice water, as needed

For the broth:

  • 1.5 liters beef or chicken stock
  • 2 cloves garlic, minced
  • 1 small shallot, minced
  • 2 stalks of celery, roughly chopped
  • 1 carrot, peeled and roughly chopped
  • 1/2 tsp salt
  • 1/2 tsp ground white pepper
  • 1 tbsp oil

For serving:

  • Cooked noodles (rice noodles or egg noodles)
  • Fried shallots
  • Chopped scallions
  • Sambal (optional)
  • Lime wedges (optional)

Instructions:

  1. In a large mixing bowl, combine the minced meat, tapioca flour or cornstarch, minced garlic, minced shallot, salt, white pepper, sugar, baking powder, chicken powder (if using), and egg. Mix well.
  2. Slowly add ice water, a little at a time, while stirring the meat mixture until it reaches a smooth and pliable consistency. The meatball mixture should be sticky but not too wet.
  3. Shape the meatball mixture into small balls with damp hands and set aside.
  4. In a separate pot, heat the oil over medium heat. Add the minced garlic and minced shallot, and sauté until fragrant.
  5. Add the beef or chicken stock to the pot, along with the chopped celery, chopped carrot, salt, and white pepper. Bring to a boil and then reduce heat to a simmer. Let the broth simmer for 15-20 minutes to allow the flavors to meld.
  6. Carefully drop the meatballs into the simmering broth and cook for about 5-7 minutes until the meatballs are cooked through and float to the surface.
  7. Once the meatballs are cooked, remove the pot from the heat and strain the broth to remove the vegetables and other debris.
  8. To serve, place some cooked noodles in a bowl, add a few meatballs on top, and then ladle the hot broth over the noodles and meatballs.
  9. Garnish with fried shallots, chopped scallions, and sambal (if using). You can also squeeze some lime juice over the top for added freshness.
  10. Serve hot and enjoy!

Note: Bakso is often served with additional condiments such as fried wontons, tofu, or boiled eggs, and you can customize it to your liking. Feel free to adjust the seasoning and ingredients according to your taste preferences. Enjoy your homemade bakso!
